All&#8217;inizio della mia carriera, ho fatto uno stage presso lo Ch\u00e2teau Haut-Brion, il pi\u00f9 rinomato vigneto del vigneto di Graves. L\u00ec ho incontrato il suo direttore, M. Jean-Bernard Delmas. Un personaggio di rara severit\u00e0. La sua voce cavernosa e la sensazione di sicurezza che emanava mi impressionavano. Gli ho chiesto come avesse fatto ad arrivare fin l\u00ec. Amo i caratteri laboriosi nel senso nobile del termine, l&#8217;umilt\u00e0 e la costante messa in discussione. Mi inserisco nel &#8220;zero compromessi&#8221; e questo a volte sfiora la tirannia (ride).<\/span><\/p>\n<p><span>Come uomo, mantengo un legame emotivo molto forte con questo vino. Durante la degustazione, sono molto attento alla comunicazione non verbale. Mi piacciono le riflessioni silenziose. Per me, questo significa che la persona che degusta si lascia invadere dalla dimensione sensoriale dello Champagne. Tra il vino e l&#8217;uomo si instaura un dialogo naturale&#8230; Al contrario, sentire banalit\u00e0 come &#8220;questo vino \u00e8 buono&#8221; mi d\u00e0 molta meno soddisfazione.
